Dark kitchen
As their name suggests, they are kitchens, but they are hidden from the public. Therefore, their function is only to cook for delivery. This also implies a “new” type of kitchen staff, as they now need to be more agile, more flexible and more versatile.
The strategy followed by Beer&Food optimizes the space of these kitchens to cook dishes from the virtual brands mentioned above. They also offer their franchisees the possibility of incorporating some of the new brands to increase their profits.
The rise of delivery is forcing companies in the foodservice sector to constantly reinvent themselves. We must see this as an opportunity for new business models and new markets.
